After coming back from Europe my newest obsession has been burrata cheese on salads with toasted baguette on the side. Something about this dish really takes me to my happy place. I hope it can take you there as well.
I made a double batch of this recipe, keeping the pasta/veggies separate from the kale and protein and had it for dinner two nights in a row. The second night I made it with chicken sausage instead of shrimp and it was fantastic. Also, it stores great in the fridge as leftovers.
