Strawberry Chocolate Oatmeal Muffins

This is a great make ahead breakfast for the person on the go. Packed with both convenience and flavor!

  • Muffin Pan
  • Muffin Aluminum Foil Liners


  • 1 Cup Quick Oats
  • 1/2 Cup Brown Sugar Packed
  • 1 Cup Plain Greek Yogurt
  • 1/3 Cup Oil I used olive oil
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • 1 Cup All-purpose Flour plus one 1 tbsp for strawberries
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 Cup Chopped Strawberries
  • 1/2 Cup Dark Chocolate Chips



  • Preheat oven to 400°F.
  • Line 12 cup muffin pan with aluminum foil liners.

Combine Wet Ingredients (including oats)

  • Add brown sugar, Greek yogurt, egg, oil, vanilla extract, and oats to a medium size bowl and mix well. Set aside.

Combine Dry Ingredients

  • In a separate large bowl combine flour, salt, baking soda, and baking powder until evenly combined.

Remaining Instructions

  • In a separate small bowl toss strawberries with 1 tablespoon of flour.
  • Combine wet ingredients into large bowl of dry ingredients. Stir until combined, batter should be lumpy. Be sure not to over stir!
  • Fold in chopped strawberries & dark chocolate chips. (2-3 stirs)
  • Divide muffin batter evenly between prepared muffin cups.
  • Bake muffins on middle rack for 20 minutes or until toothpick inserted in the middle comes out clean.
  • Remove baked muffins from oven and allow muffins to cool in full. (5-10 minutes)
