If you are looking for the perfect fall/winter salad recipe look no further. I'm not kidding when I say every time I make this recipe I get a compliment; & who compliments a salad? This recipe is sure to be a hit at your next family gathering or even a week night dinner. The fall harvest salad is perfect to accompany any side dish or be the main star with adding grilled chicken to the top (or a protein of your choosing!)

Ingredients
  

Salad

  • 6 Cups Chopped Kale
  • 2 Thinly Sliced Honeycrisp Apples
  • 1/2 Cup Sharp White Cheddar Grated

Cinnamon Vinaigrette

  • 2 Tablespoons Red Wine Vinegar
  • Tablespoons Honey
  • 1 Diced Shallot
  • 1 Minced Garlic Clove
  • 1/2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Teaspoon Dijon Mustard
  • 1/3 Cup Olive Oil

Sweet & Spicy Toasted Pecans

  • 1/2 Cup Pecans
  • Tablespoons Honey
  • 1/2 Teaspoon Red Pepper Flakes
  • 1/8 Teaspoon Ground Nutmeg

Smoky Honey Pepita Clusters

  • 1/2 Cup Pepitas Sunflower seeds also work
  • 1/2 Tablespoons Coconut Oil
  • 2 Tablespoons Honey
  • 1/4 Teaspoon Smoked Paprika
  • Pinch Salt

Instructions
 

Prep

  • Preheat oven to 350℉

Smoky Honey Pepita Clusters

  • Microwave coconut oil and honey until melted together, 15-30 seconds.
  • Add pepitas to melted coconut/ honey mixture.
  • Stir in salt and smoked paprika.
  • On a parchment lined baking sheet spread out pepita mixture.
  • Baked for 1--15 minutes until golden.
  • Remove from oven and let cool completely.

Sweet and Spicy Toasted Pecans

  • Heat pecans in nonstick skillet over low heat, stiring often
  • Once fragrant, stir in honey, red pepper flakes and nutmeg.
  • Stir for a few minutes letting the honey bubble.
  • Remove from heat and let cool completely.

Cinnamon Vinaigrette Dressing

  • Whisk together vinegar, honey, mustard, shallot, garlic, cinnamon, olive oil, salt, and pepper. Set aside.

Salad

  • Massage kale with one tablespoon dressing and let sit for 10 minutes
  • While kale sits, thinly slice apples.
  • Combine apples, cheese, pecans, and pepita clusters.
  • Toss toppings with kale and mix in remaining dressing.
  • Enjoy!
